NOT OUT OF A CAN SLOPPY JOE’S—with extra kick of protein—INSTA POT
I am constantly trying to find ways to make things from scratch and also trying to add some extra goodness to the kids diet……I also have 6 mouths to feed (and 2 fur babies- more if it were up to me)which can be quite pricey- SO I am also always trying to find ways to make my beef go farther! I used 2 pounds of beef for this recipe but bulked it up then with a Cup of QUINOA- which makes MORE of the recipe and makes MORE sandwiches which feeds MORE mouths
These sloppy Joe’s are amazing – homeade and have extra burst of protein and fiber!
2 lbs of beef (can be partially frozen)
1 C raw quinoa
2 cups water
2TBS olive oil
3 garlic cloves chopped
¼ onion chopped
1 C vegetable broth
1 15 oz can of tomato sauce
2 tbs of tomato paste
2 tbs brown sugar
1 teaspoon dry mustard
Salt and pepper to taste
1 tsp of chili powder—or more if you like
In the INSTA POT
Put in 2 cup of water and 1 cup of rinsed quinoa close and press high pressure button for 1 minute….
**it will take longer than a minute because it has to get up to high pressure first—when done vent out the steam and open the lids- pour your cooked quinoa into another dish to set……put the wire insert in the insta pot and now place your 2lbs of beef in there (half frozen or more) with a cup of water close up press high pressure and set for 25 minutes……
In a pot on the stove sauté the chopped garlic and chopped onion in the olive oil….then add all the rest of the ingredients in the sloppy joe mixture and stir and bring to slight boil—take down the heat then and let simmer (stirring once in a while)……
When the meat is done you will just break it all up and stir the meat and the quinoa in the sloppy joe mixture— enjoy on a bun or on my FAT HEAD (low carb) bagel….with a side of my Healthy Coleslaw (both recipes in the blog!) and there ya go!!
NOTE: for vegetarian – take out the meat and add black beans!
Have 1 cup for a RED container and ½ Yellow!
