WHATS FOR DINNER!! Try this
QUINOA STUFFED PEPPERS!
Brown one pound of hamburger
Add in half a chopped onion
Add 1 Cup of cooked quinoa and 1 Cup of black beans
Mix well then add this homeade TACO season ( I like this because it is low sodium and I know EXACTLY WHAT IS IN IT!!)
1 tbs Chili Powder
1 ½ tsp paprika
½ tsp garlic powder (not salt)
2 ½ tsp salt
1 tbs cumin
½ tsp oregano
½ tsp onion powder
¼ tsp pepper flakes (optional)
I know it seems like a lot to put together but just quad the batch and then store in a jar and use it as you need!!
Add these seasonings to the browned burger mixture with about ½ C of water and bring to slight boil then turn down and simmer for a bit.
Slice 4 colored peppers in half and stuff the mixture in top with a few crumbles of feta and bake in oven about 350 for 20 minutes….or until golden on top!
Have 2 halves for a red:1/2 yellow: 1 green : so little cheese that you can not count it as blue unless you add more cheese
Top with quac and salsa!
