Squash Breakfast Muffins

Amazing way to get some veggies in right in the morning!

Mix Wet Ingredients First

1 egg

1/4 C Truvia Baking blend

1/2 C Coconut sugar

1 C baked Squash (i cut mine down the middle and flip over on baking sheet drizzled with a bit of olive oil bake 350 until tender could take 30-45 minutes then scrape out a cup full)

1 tsp Vanilla extract

1/2 C applesauce

1/2 C greek yogurt ( I used vanilla)

In a separate bowl mix the dry ingredients

1 C of Quinoa Flour (could use and flour)

1 1/2 C Almond Flour (could use any flour)

1tsp Baking powder

1tsp baking soda

1/2 tsp nutmeg

NOW combine dry ingredients with wet mix well then optional add in 1/2 C dried cranberries……

Bake in mini muffin tin for about 20 minutes on 350

TOPPING OPTIONAL:

Mix well:

2tbs butter

5 OZ cream cheese softened

2TBS truvia baking blend

1tsp Vanilla extract

Frost cupcakes or for a healthier option just top them with vanilla greek yogurt!

2-3 cupcakes no topping for yellow (i know there is a veggie in there but not enough it is still a yellow but a healthy one!!
