Salads are great but sometimes I get sick of them – that is where coleslaw comes in! So good and I never get tired of it! Note that it seems cabbage has better shelf life in the fridge than lettuce- for me anyway.
I LOVE coleslaw but store bought has way to much extra sugars and yuck!! I make my own!! Buy a head of cabbage shred it ( i cheat and use a processor or sometimes I just buy the bag) shred WHOLE carrots (did you know baby carrots have extra chemicals- so do the work buy them while and clean em) Mix together with 2 TBS of white vinager 2 TBS of Truvia 1 TBS of celery seed 1/2 C plain nonfat Greek yogurt and 1/4-1/2C (depending on how creamy you like it) of Olive oil MAYO and some salt and pepper (could add a tbs of olive oil) chill for a few hours and BAM !! Coleslaw that is not ALL SUGAR AND FAT!! Love it!!
