TACO SOUP –Quick n easy

QUICK AND EASY TACO SOUP

Place a large pot coated with olive oil on low/med heat on stove

Chop

3 large colored peppers

An onion

3 cloves of garlic

And sauté a few minutes

Add right in the pot one pound of lean ground beef

Cook all together until beef is browned

Add in 1 bag of riced cauliflower

Stir

ADD: IT IS ALL ABOUT THE SEASON

1tbs chili powder

1 ½ tsp paprika

½ tsp garlic powder

2 tsp salt

1 tbs cumin

½ tsp oregano

½ tsp onion powder

Mix this well with all ingredients

Now add

1 can of stewed tomatoes (chopped)

1 small can of tomato sauce

1 carton of low sodium vegetable broth

1 jar of salsa- I used a mason size jar that I had canned this summer but you can use any size

Cover with water

Bring to a boil then let simmer for about 30 minutes or even less if it seems done

DELICIOUS!

USE YOUR BEST JUDGMENT ON COUNT

I am saying

1.5 Cup for a green and ½ red

If you make it meatier than a full red
