Egg Frittata (low carb)

This was SO SO SO AMAZING with a nice fluffy crust and all!

Crust:

I used a pie pan for this..

Melt 2 C of shredded mozzarella with ¼ C of cream cheese ( I used Chive cream cheese) for 1 minute 30 seconds….

In a mixer add 1 Cup of riced or puréed cauliflower

(You can used frozen riced cauliflower OR just chop a half a head microwave it 8 minutes let towel dry and purée it down in food processor) mix this with one egg, ½ C of carbquick OR almond flour and 1 TBS of baking powder…..once this is mixed add the melted cheese (be sure to have stirred them together first then add)

Now spread out in coated pie pan – YOU WILL NEED TO COAT YOUR HANDS with the flour you chose to get this spread otherwise will be super sticky….

Bake this for about 20 minutes on 425 or until seems lightly gold…..

In a large bowl mix 4 eggs plus 2 egg whites…on cup chopped spinach ½ C almond milk or milk ¼ C plain greek yogurt one chopped onion and one chopped pepper….

Pour this right on the crust and top with ½ C shredded parmesean.

Bake again at 425 for about 15 minutes or so you will be able to tell when done…..NOTE: it might really RISE up but it will settle once taken out.
