Sweet Potato Fajitas

2-3 sweet potatoes

1 yellow pepper

1 orange pepper

1 green pepper

1 carton mushrooms

1 yellow onion

3 garlic cloves

Slice all of these veggies the long way as to make fries- long and thin. (Except onion and mushroom you can just chop that and the garlic)

Now in a large bowl drizzle with olive oil and add this Fajitas Season…

In a smaller bowl mix:

1TBS chili powder

1 ½ tsp cumin

1 tsp cornstarch

1 tsp paprika

¼ tsp garlic powder

½ tsp onion powder

¼ tsp cayenne (for heat)

Salt and pepper

Pour this and toss over the veggies

On a large baking sheet drizzled with olive oil spread out all the vegetables and bake at 375 for about 30-40 minutes until tender (check sweet potato it will take the longest)

While that is baking cook up some quinoa and black beans

Top a tortilla with the veggies, some black beans and quinoa and add a little hummus and guac too!

Delicious!

For a container count you can have to fajitas for 1 green 2 yellow / you could add some chicken in there for a red OR you can count your quinoa as a red instead.

For 2B I would say make sure it you have this at lunch and mostly veggies will be fine! – if you take seconds be sure it is just the veggies!
