Peanut Butter Eggs (healthier)

 

 

 

 

I love a good ole fashion Reese’s just like anyone else. (recipe below)

😞I used to be obsessed with these… I remember in years past like binging on these suckers for the entire Easter season…. I felt like shit every single binge but… I kept doing it…
🙋Now I have created a lifestyle that I never feel deprived.
👩‍🌾 I Am insanely motivated to create my old favs in a new healthier way!!! I did it with these too!! My kids and I can’t get enough of my home ade peanut butter eggs and I feel no guilt and no bloat…

So, a few things here that you likely will not have on hand…Puffed Quinoa (it is amazing as a filler being lower carb and cals and having a purpose as a filler).- But this is what happened..literally after I made this recipe they stopped selling the brand i used SO if you can find some other good quality Puffed Quinoa- please let me know otherwise I will add the link to decent puffed rice .The other is Carbquick which you can find on Amazon and is a low carb baking flour. If you don’t have this on hand you can always use Almond Flour.

RECIPE:

1/2 C puffed QUINOA or puffed RICE

1/2 C natural Peanut Butter (slightly melted to help stir)

1/4 C carbquick or almond flour

1 TBS truvia or sugar substitute

1/4 C shakeology (ask me how to get it-I did vanilla/chocolate mixed) or a good quality powder

Mix this all well- form into balls then press slightly to make oval eggs

line  a baking sheet with parchment paper and lay these out- I made about 14

Place in freezer until set and easy to work with

Melt a good quality DARK chocolate bar (I use Moser Roth from Aldi – or pictured is a low carb bar from Trader Joe’s) It was about 3 Moser Roth Bars OR one of the Trader Joe Bars. Melt in short increments so you don’t over heat it.

Pull the set eggs out of the freezer- You can either just dip the tops and lay out or try to dip the entire egg. Either way these are amazing and a better option for everyone!

Let set again in freezer and STORE in freezer too!

Under 7 ingredients and healthy: PIZZA Peppers 🍕🥗

You will need:

2 bags frozen riced cauliflower

1 can stewed tomatoes

3 wedges laughing cow cheese

1 jar pizza sauce (I found the great value at Walmart had least sugar)

1 large Carton cottage cheese

Mozzarella cheese

6 medium – large green or colored peppers

Sauté cauliflower with some olive oil on stove in large skillet until tender and stir in the laughing cow wedges along with pizza sauce. Let simmer a few minutes.

Slice peppers in half and take out seeds

Put about 1/4C of cottage cheese in pepper then add heaping scoop of cauliflower mixture and top with half slice of mozzarella cheese

Bake them at 425 for about 20-30 minutes until golden

Let cool and enjoy!

Protein and veggies all in one! #winner

If u have leftover cauliflower mixture just top with a little cheese and enjoy

Chinese Take- OUT (less than 6 ingredients)

While craving take out today I decided to try to make a healthier version. I am not saying I don’t do take out food, I do! I just don’t do it on a random Wednesday. I try to save my out do eat treats for special occasions!
My passion is and has been for several years now making GOOD FOOD that WE CRAVE healthier for us and our families. I have loved doing this for my family and for my friends and clients families too!

Now though I even want to take it up a notch. I want to get HEALTHY food in yours and your families bodies with less ingredients. I now am researching and testing new recipes that will contain fewer than 7 ingredients! YES – GOOD FOOD with less ingredients. Because, LESS IS MORE in a lot of cases dealing with food. It is cheaper and usually healthier!

Here is one of the many I have tried and is family approved!

Chinese Take- OUT

YOU WILL NEED:

1 large bag of shedded coleslaw mix ( I like to buy the one’s with carrots and extra veggies in it)

1 lb of ground beef or turkey

1 carton of mushroom

1 tsp ginger

1/4 C soy sauce

3 TBS of natural peanut butter

salt and pepper to taste

Brown your beef about half way in a large skillet add all the rest of ingredients. Stir and let simmer about 10 min.

You can FOR SURE add more veggies if you wanted!

Mediterranean Veggie Pizza (cold and GOOOOOOOD)

I am at a friends gathering this past weekend and the dip of the night, for me anyway, was this amazing, creamy flavor-filled Mediterranean-ish dip. I asked my friend Marah the recipe- which was given to her by our friend Ben, super easy! But I wanted to make a way to not make it a dip but kind of a mealish- or pizza, if you will…..

So I put her recipe on a crust! AND IT WAS AMAZING!!! It was- lower carb yes but filled with so much flavor I cant even….this will be a perfect dish to pass at your next gathering too! Healthy and tasty!

Trying to stay on track at parties is tough- so this can be your little secret to not totally disrupting your health eating habits— you don’t have to tell anyone its healthy!!

The Crust:

In microwave heat 2 cups shredded Mozzarella plus 4 TBS of cream cheese ( I used chive but you can use whatever )for about 2 minutes and stir well…add this to a standing mixer if you can if not a hand mixer can work. Now pour in ½ C almond flour or carbquik plus ½ c riced cauliflower (frozen veggie section) plus 1 TBS of baking powder and 1 egg. Mix well and spread on greased pan or 9 x 13 inch cake pan could work—I wish I would have even made it bigger maybe like a cookie sheet?….bake for about 20 minutes or until golden.

Let cool-

Top with

1 container of hummus- I used garlic it was amazing!! Then spread on top of the hummus about ½- 1 of plain greek yogurt …now top with whatever floats your boat.. I used

Chopped spinach

Chopped tomato

Chopped colored peppers

Chopped cucumber

And it was AMAZING!!!!!!!!!!!

I wish I had olives but I didn’t….

You will LOVE THIS- I promise

Mine made about 16 servings…but cut how you like. This is a great alternative to the flour filled butter filled sour cream filled veggie pizza we all know and love.

I choose almond flour and carbquik and these lower carbish recipes because of the low glycemic index. Basically using these will help to not spike your blood sugar and have you come crashing down in hunger again quickly…. Just one reason of many!

Key Lime Cream Puff (low sugar low carb)

Ok- I am in need of desserts this week- I dont know why but I just am! Here was a GREAT solution to my sweet tooth and the kids!

Key Lime Cream Puff

In a mixer put 8 egg whites and start mixing- this will take a while so I would use a standing mixer….

In another bowl mix together

6 egg yolks

2 TBS stevia or truvia

1 tsp pure vanilla extract

4 oz cream cheese

When egg whites start to form peak ADD IN ¼ tsp of cream of tartar

When egg whites are fully peaked fold in the egg yolk mixture gently….

Spray muffin tin or 2 pie pans

I made 12 Muffins and 1 pie out of this

Scoop heaping spoonfuls in the cupcake tins or divide in the pie pans

Bake at 350 for about 12-15 minutes (watch when golden) this will RAISE A LOT…..

Take out and let cool- it will deflate

Now for the topping- you can choose whatever you like I just did

1 cup of whipping cream plus 2 tsp of truvia plus ½ tsp vanilla and mixed this until fully peaked like whip cream then I mixed in 1 6oz container of key lime greek yogurt

Fill your pie with this OR just place this topping on as you go…..best taste chilled.

2 servings for 1/2 red and ¼ blue—that’s a good guess 

This is a bit tedious and time consuming BUT I think well worth it-

You could cut this in half to not make so many!
