Shakeo Peanut Butter Balls

LOWER carb snack:Peanut butter Shakeo balls

Super easy and good- but careful on how many you eat- they can be addicting–I say these are a good one for a snack when trying to keep your carbs lower in the afternoon.  

½ C of chocolate shakeology (I suppose vanilla could work too) 

1 C all natural peanut butter ( be sure sugar content is low)

2 large squares of dark chocolate ( I buy mine at Aldi- the large darkest chocolate bars they have)

Melt PB in microwave for only 30 seconds to soften add shakeo to it and stir good – scoop out in to balls on cookie sheet (line with wax paper if you have)  

Freeze for 2 hours–take out and melt dark chocolate in microwave in increments of 30 seconds and stir so not overdone–pour chocolate on the balls OR you can try to dunk them in–freeze again for an hour or so then you could store them in Tupperware in the freezer

Higher calorie but lower sugar and packed with protein—

Still going to count as a yellow but like I said a good snack when lowering carbs—

My batch made only 10 try to get 12 if you can…I will say have 2 for a yellow container (guess on your thoughts as the size will very- if smaller have 3)

** I know its hard to wrap your head around why this is a yellow since it has tsp’s in it and protein but it does NOT have enough protein to count as one and it has to many tsp’s to count as just that- so when in doubt desserts are YELLOW!!

IT IS !!! IT so is- we CAN and WE WILL control this! its not going to happen overnight- but YOU ARE STRONG AND SMART–little changes will have a trickle effect on us- our families- our friends – it will!

! Heart Disease is the LEADING cause of death in AMERICA and IS preventable—yes, we hear and see that it is possibly hereditary — and I know things happen in this life that we can not control- but why not GIVE IT OUR BEST SHOT—one thing we have ULTIMATE control over is the food WE eat and the food our FAMILIES eat. RIGHT?

NOTE: I was not always healthy- I am not perfect! WE ALL START somewhere-!!!

Quinoa-Chicken-Veggie ON THE GO salad!

Easy salad to go!! (Takes some time to make- but super easy to eat on the go!)

My husband is on the road everyday with work- he is getting so sick of sandwiches and cut up veggies- I tried to pack a lettuce salad a few times and it is just not easy or practical for him to take the time to eat. I had a few customers ask me something easy to take to lunch that is healthy too and does not involve a salad! Here is what I came up with- it has Protein- veggies and a few carbs and easy to throw in a tubberwear dish and eat with a spoon…….

Quinoa veggie chicken salad!

1 whole chicken boiled and shredded 

2 cups chopped carrots

2 cups chopped celery

1 chopped onion

1 cup small colored peppers chopped

1 packet of Simply organic greek Mediterranean herb dip

2 cups plain greek yogurt

Salt and pepper

2 tbs of olive oil

2 cups cooked quinoa

4 oz Feta crumbled cheese

MIX THE GREEK YOGURT AND THE packet of Mediterranean Herb dip together first….

The hardest part of this is the prep of chopping all the vegetables and cooking and shredding the chicken after this is all done you just throw all of the ingredients in a huge bowl and stir well! Refrigerate and have 1.5 Cups for a GREEN:RED:1/2 Yellow and ½ a blue

YUMMY!!

** buy organic chicken–buy all your meat organic! Please!! And dairy 😉

***NOTE: this made a HUGE batch — you may want to cut it in half

Protein Packed Pizza Casserole

I LOVE pizza- we all do ! The kids too! I wanted to make a pizza dish that they would love but that was packed with protein and veggies too! Yes it has carbs but with the carbs we have extra protein and that is better for all of us and makes me feel better about digging in on this too!

1 lb ground beef 

1 lb ground Italian pork sausage

1 red pepper

1 onion

2 C raw spinach

1 can stewed tomatoes

1 C of quinoa cooked in 2 cups of water (end result makes about 2 cups then)

2 cups of cooked elbow noodles

2 C Shredded cheese -mozzarella, parmesean, cheddar or a mixture

1 container of cottage cheese

½ Can of sliced olives (optional)

2 jars of lower sugar pizza sauce

Start by browning meat in a large skillet- while this is cooking chop up ALL of your vegetables- when meat is browned add in all the veggies and cook until tender add the pizza sauce and the stewed tomatoes(drained) to this.

You will need a large casserole dish – pour the meat and veggie sauce mixture in this along with the quinoa and the elbow noodles –stir up good then spread mixture so its all even through the baking dish ( I used a 9×13 in cake pan) top with container of cottage cheese first then finish topping with the shredded cheese and a few olives sprinkled on top–bake 375 degrees for about 30-40 minutes or until top is golden…let set about 15 minute before serving….

Note: I could have just added the noodles but I added the quinoa because although it is a carb it has a protein benefit in it and I wanted to add something other than just a bunch of noodles to this- if you are gonna eat a carb – quinoa is the way to go–if it was just for me I would have left noodles out but the kids and Kev like the noodles 

ONE HEAPING cup or serving–1 red 1 green 1 blue 1 yellow  

Ok- you want to save your yellows–here is what I did as alternate:::

Stuffed Mushrooms or Peppers! 

Sliced in half and took seeds out of 2 large colored peppers and took stems off some small portabellas–filled them each with a little cottage cheese- and some of the meat and veggie sauce mixture topped with a little fresh Parmesan and one hot pepper and an olive- (I like heat–it revs the metabolism- you don’t have to add this but you can!) Place on cookie sheet and drizzle with olive oil- bake 375 for less than 20 minutes- 

Have one pepper (so two halves) and 2 mini mushrooms for the count of:

1 red :1 blue: 1 Green

 NOTE: I wanted to use large mushrooms but Aldi had none- so I used the small BUT now I decided these mini’s are a perfect appetizer for a holiday party!! BONUS!!

Power of Positive💥

👉The other day I had someone ask me – how do you stay so positive all the time? I actually get asked this quite a bit. I had a solid 45 minutes in my car by myself Saturday- It was the BEST FEELING ever—just me and 88.1 on the jam that switches to 102.5 as you approach Mineral Point going to Mount Horeb. This is my thinking time🤔- my weekly drive to the shop – I love it- I am not sure if I love the peace of the drive or the fact that I get to see my customers who have turned into friends. ❤️

On my way home that day- the question kept hitting me- how am I so positive🤔? What makes me positive now that I didn’t have before in my life- kids? Husband? Fam? 

❤️The fact is ALL of it- all of my surroundings are positive. I am not sure if it is just as we grow older we are more selective on who or what we let in our lives- but at this moment in time I have so many positives in my life. So many people that lift me up. I hate the word “drama” but I can say I really have none. I just put my foot down one day and said this is who I AM and if you like it great and if you don’t then move on. I don’t surround myself with negative. Let’s be real – negative can drain and drain you. Around it too much and it can make you pissed off a lot. Cut that crap out of your life—bring in the positive!

I can say it is NOT ME who has all the positive energy- it is who and what I SURROUND myself with. I can not take credit for being a happy person- it is my faith my family my friends my customers my challengers my class attenders – it is my kids my husband my home- heck my dogs! All of these positives in my life make me who I am today. People, places and things come in and out of our lives all the time. Some are placed in there for long term and some short term… I had negative days—years even.. I cant even put a finger on people or places that made me so negative but it was for sure something to do with my surroundings—ALWAYS keeping those once close to me at a distance. Slowly over time those negatives have dissolved and have been replaced with GOOD. 

👉I know that people say what you put out in the universe comes back to you – I do think that to an extent—but I also believe that what you let in makes you too! I cant take the creds for this uplifting spirit-it is each person I cross paths with that helps with this—you might not know me or maybe have not seen me in 20 years but we are crossing paths right now because you are reading this—and you reading helps me keep going and that I am greatful for! 💋You might be my family or my friend or come to yoga or are in my challenge groups- thank you too! Without all of you – I would not be me!👏👏👏💇💃🏋️‍♀️

☝️NOTE: I am not happy ALL the time- lets just be clear on that! Mostly yes…100% no! That would not be normal—right? Lol😂

Faith-weights-&protein shakes

😥Do you ever have a workout that makes you cry? 🙋No, really, makes you start crying when you are done? I had one of those today—I am thinking on this…. why am I crying? Not because it was hard – I do hard workouts all the time! It’s this…..before this program I was an ALL OR NOTHING kind of person- like…balls to the wall or not at all- type. I would screw up my “diet” and just throw in the towel and say F#$% it I am done until next week- or until after the special event- or until after I get through this or that. I would – I would quit and start SO MANY TIMES!! It was out of control- and try this fad and that fad…..no carbs- sugar free—one meal a day- don’t eat after 5—no this or no that- and it DID not work! I mean maybe for a week or so maybe even a few weeks then I would lose 5 lbs only to gain it back, get discouraged and QUIT.

I have to say- the reason for my cry today was this—I have been consistent- I have been eating healthy and working out- I have maintained below my goal weight and FEEL great! I have “cheated” on my meal plan a lot- but I never beat myself up and I enjoy it and move on- THIS IS REAL FRICKEN LIFE people- no restrictions – the more I restrict the more I wanted! Take away carbs from me- I eat a bag of chips at midnight! Take away sugar – I eat a bag of peppermint patties in one sitting—This is not real life – you cant take away and expect to stay with it for the rest of your precious life.You need to be able to have a cocktail and dessert on a Tuesday night and not beat yourself up about it and say screw it until the next MONDAY. It doesn’t have to be that way for me anymore or for you! Moderation 👏It is the key to success…..SO, back to the tears I shed this morning—I just felt SO FRICKEN HAPPY with how much I have changed and grown. How much I have become healthier with the opinion of ME and my body! It is an amazing feeling—and this program and this helping others – it is SO UPLIFTING! I am not perfect- never gonna be – but as long as I am living this healthy lifestyle and sharing it with others I feel pretty damn good about myself! Tears of joy today- I guess—now that is some good stuff.

Berry Tart🍓

👏OMGOSH!! I wanted to save this for my #donthatemotivate group starting on Monday but this is TOO GOOOOOOOD to not share RIGHT NOW!!! SO EASY and amazing! I can NOT take creds though. My girl, Audrey Mills, shared this idea with me and I tweaked it a bit to fit into my portion control eating plan!! HOLIDAY FAVORITE this year for sure!! Can’t wait for the fam to taste this on Turkey Day! (Yes I am hosting- yes I will be sharing some recipes!)Berry tart: 🍓🍒🍋

Preheat oven 375

In a pot on the stove place 

5 CUPS of frozen mixed berries ( I did blue and black)

Add the juice of a lemon and mix over medium heat until tender and sort of sauce like-

Place this in sprayed (nonstick spray ) casserole baking dish (8X8 ish or so)
In a bowl MIX

1 C of carbquik (or alternative – almond flour- coconut flour)

½ C truvia baking blend (or alternative natural sugar sub)

2 eggs 

Stir this together until crumbly like
Pour this over the berry mixture ( I had to use my hands and place it on top because it is quite stick and thick)
Melt 3 tbs of coconut oil and drizzle on top
Bake at 375 for about ½ hour or until golden on top
Serve with a squirt of Whip Cream
👉Have 1/8th of the pie with a spray of whip cream for 1 Purple 1/2 yellow and 1 teaspoon
😍SERIOUSLY AMAZING!!
